LOADED NACHOS


Loaded Nachos

I find these one of the most filling and delicious appetizers ! If you have the ingredients ready, it's easy to make. You can add as many or as less ingredients you want. And the plus point about this dish is - it is a definite crowd pleaser ! Let's take a look at the ingredients here :-

Ingredients :-

Yellow/White corn tortilla chips (rounds or triangles - your choice)
Black olives sliced into rings
Pimiento stuffed green olives sliced into rings
Red onion chopped
Tomatoes chopped
Lettuce shredded fine
Jalapenos sliced into rings
Scallions chopped for garnish
Cilantro chopped for garnish
Mexican cheese blend / Spicy habanero cheese
Baking dish / stoneware which can bear the broiler heat
Hot Green salsa (recipe follows)
Sour cream

Process :-

1.  Turn the oven on broil.

2.  In a baking dish or serving stoneware dish spread the tortilla chips making sure they don't overlap.

3.  Spread just a handful of cheese over the chips.

4.  Spread rest of the ingredients except scallions, cilantro and cheese one at a time in desired quantities.

4.  Cover it with generous amount of cheese and place it under the broiler for a couple minutes till cheese starts bubbling and turns golden.

Note : Keep a close eye as the cheese tends to burn quickly under the broiler

5.  Take out the dish carefully using gloves. Garnish with chopped scallions and cilantro. Serve hot with green salsa and sour cream. Yum !!




Hot Green Salsa 

Ingredients :-

2 roma tomatoes, diced
2 big garlic cloves
1 small onion, diced
1 big jalapeno
handful of cilantro
Salt to taste
Squirt/two of lemon juice




Process :-

Put all of the above ingredients in a chopper. Here we are using a chopper since we are looking for nice, chunky salsa. You can adjust the amount of Jalapeno according to the heat you prefer.
